Stepping into the world of a plant based diet.
I've become totally passionate about this new way of life. I've been reading websites, blogs, searching recipes and reading books. My current favorite is The Engine 2 Diet, and blog. The author Rip Esselstyn a Texas Firefighter is the son of one of Caldwell B. Esselstyn, Jr. one of the doctors who brings us the video and cookbook Forks over Knives. Then their is my juicing website that started it all from the movie Fat Sick and Nearly Dead. I love the way the simply share the information, and explain the health differences in eating a plant strong diet, vs the way America eats. It makes me think of so many people who are suffering with chronic illness, cancer, and so many other problems that the diet we all consumed have either caused or contributed too. I just want to share it with everyone.
So what have I've been cooking. Well all kinds of things. Since I'm gluten intolerant I can't use the whole wheat things, so that adds an extra challenge to some things. So I've made pizza with polenta as the crust, and a portabella mushroom as a burger and a pizza crust. Both yummy.
I've altered a few recipes from Skinny Taste website (another favorite website) that already has great Vegan and Gluten Free recipes. I took her recipe for Chicken Enchilada Stuffed Zucchini, and altered into a vegan recipe. It turned out really good. I substituted the chicken filling for her Arroz Congri (Cuban Rice and Black Beans) and added the zucchini insides in the rice. Next up I'm going to try making her Spicy Black Bean Burgers, just have to figure out how to substitute the eggs. It's something new all the time.
I love cooking and juicing. So here is sample of my daily diets.
Breakfast: Oatmeal with fruit and Almond Milk and a juice made of carrots, apples, celery, beets, and a lemon.
Lunch: (yesterday example) Portabella Mushroom pizza. Mushroom for the crust, pizza sauce and veggies topping it off.
Dinner: sautéed grape tomatoes, carrots, green beans, bell-pepper, and onions, on top of Quina. And a juiced green lemonade. Kale, lemon, apple, cucumber, celery and a bit of ginger.
Dessert: was frozen banana, strawberries, and pineapple all blended together in my food processor with a bit of Almond milk and vanilla. It's like frozen yogurt but no added sugar, and it's so good. I take the left over and put it in Dixie cups with Popsicle sticks and they make great frozen fruit treats.
Snacks: varies, nuts, cocoa and gogi berry bars, fruit, cut up veggies and raw revolution bars.
Also I drink at least a liter of water a day and some herb teas.
So see it's not so bad. But the best part is I feel better, and other people can see the difference. I've lost 8 pounds without even trying. People are telling me how good I look. My skin looks better, my hair is looking better. I now walk through the grocery store untempted. I know what effect that Stoffer's Lasagna is going to do to me, or that I'll feel sick if I eat bacon and eggs things I use to love so much.
Are there things I miss of course. Who doesn't love pizza, and burgers. Going to the Giant's game I won't eat my hot dog however I will partake in the Garlic Fries, even though the grease will make my stomach feel yucky. And if I do slip off the wagon, I'll just hop back on. It's okay, I'll probably feel the effects right away.
So yes it's a challenge, eating out is very difficult, but possible. I've had more people tell me they could never give up their meat of choice. But for me it's all worth it. I don't feel sick all the time, I don't need a nap when I come home for lunch two things I thought were just how I had to live feeling that way for the rest of my life. Now I know I don't have to I'd say it's definitely worth it.
Check in with you all later.

Wow I have an 8th grader.
This summer my daughter Brinn turned 13. A major milestone in life, she stepped into the world of teenagers in just a few short years she'll be getting ready for college and moving into a whole new chapter. But I still have 5 more years for sure of her at home.
I'm proud of my daughter. She is kind loyal loving and has a compassionate heart. Her faith is growing more and more and she makes choices with that in mind. She's not ashamed to call herself a Christian and say she loves Jesus.
We have a strong bond and I truly enjoy her and the friends she has. They make me laugh.
Now don't get me wrong Brinn isn't perfect and her dad and I are far from the perfect parents. Brinn is a lot like me so we know what buttons to push. Her room is messy and she doesn't have much interest in changing that. She's sensitive and gets her feelings hurt easy so my joking around or sarcasm can hurt her feelings. But we learn and forgive.
So I pray for my daughter as she grows. Wisdom to be a good and Godly parent. For her to be safe and to grow and continue to deepen her relationship with Jesus and for her future. School marriage and friends.
I know God is watching over us He always has.

Wow I'm going Vegan
So the dietary changes have been happening since June 1. I found out that my daughter and I can't tolerate wheat, gluten, and dairy. So we began a journey to find foods to replace the things we use to eat. Luckily God has put so many people in my path to help guide me through this.
With my health issues, my chiropractor and nutrition specialist have been encouraging me to eat as clean as a diet as I can. Then they told me I shouldn't eat eggs. Ok so good by to some of the things I enjoy again.
Now I must say my sister Phyllis, has been talking to me about diet and health changes for years. My mom did as well. I can remember being a kid in 1975 and being the only kid who ate whole wheat bread (the chunky kind) fresh ground peanut butter, no sugar cereal and this stuff called carob. There were no whole foods just teeny little health food markets run by hippies and flower children. Mom also gave me supplements. Not Flintstones vitamins but actual swallow the pills and don't argue. Little did I know how ahead of the game my mom and sister were. Both of them become vegetarians, except they ate fish, and eggs. (There's a name for it but I don't know it)
Recently I've watched 3 documentaries. All about how eating the right foods a micro nutrient diet (plant based diet) can heal your body. The first was Foodmatters , Fat Sick and Nearly Dead and Forks Over Knives each one is different but yet tells and shows evidence that the way America eats is making us sick, and if we eat micro nutrient vegetable based diet our bodies heal. My husband was most intrigued with the last two, and had decided to make the change himself. This is something I never thought would happen.
So now we are looking up Vegan recipes, juicing at least twice a day, and weaning away our unhealthy eating habits. I'll let you know how it goes. My goal is to get off my 6 medications, I've already been able to leave my stomach medicine behind. Get my physical body in healthy shape through diet and exercises, but I'm not on a diet. Although in a few months I do want to try a 10 day juice fast but I'm still weaning and adjusting to the changes I've made so far.
So what have I given up so far, well you read about the wheat, gluten, eggs, and dairy. I also gave up coffee and all cafine drinks, soda, and this week processed and artificial sugars. I'm seeking wisdom in prayer and the people God is bringing into my life. I already feel better, I have more energy, my skin is starting to change, my water retention is reducing, and I've even lost about 4 lbs. I'm not an expert but I would encourage people to check out the videos. I want to be healthy, I want my husband to be healthy, and I want to teach my daughter to be eat healthy and that the food she puts in her body is just as important of a decision as all the other choices she'll make in life. Our choices today always have an affect on our future.

Starting Over
In brief 2009 and 2010 were really difficult. I hit a down hill slide in my health, I was in and out of the hospital and the ER from about Sept of 2009 through most of 2010. My husband's grandma went to be with the Lord in June (on my daughter's birthday) of 2010, he loved her dearly. In addition my husband lost his job, like many to lay offs in October of 2010, I changed positions in my company to something that would be easier on my health. I had a dear Aunt pass away from Cancer, then later her son was in a motorcycle accident and lost his leg. (he is doing wonderfully now).
In 2011, my husband finally got some work although nothing near the income we had before, but it is a job none the less. In March my mother went to be with the Lord. It was sudden and unexpected but at 83 she had lived a life of many adventures. I miss her everyday.
We lost our home in July of 2011 and moved to were I work, forcing a change in schools for the second year in a row for our daughter who was going from 6 to 7th grade, and age that is already full of insecurity and new experiences. Once again she had to navigate a new school and make new friends.
There were many other challenges along the way. I don't share all this to sing you my pity party song. (although there were plenty of days believe me when I looked to the Heavens and said really Lord, really do I have to do this too.) I share it to tell you that even through the trials God is faithful.
I no longer have to drive to work, I walk 35 steps from my apartment to my office. I'm close when my daughter is home, and she even comes and hangs out with me in the office sometimes. Where we live now is so much easier to get to everything, before everything was a 15 minute drive and if it was commute time even longer, and now it's a shorter drive for my husband to his job.
My husband has started to look at what his strengths are and how God is using this time too reshape him. Also learning that giving up all the material things we sought after wasn't anything close to loosing people we love.
My daughter is now enrolled in the top rated middle school in the area, and is doing well with A's and B's. She has a sweet group of friends, and has become even closer to her youth group friends. She's even looks at some of the public school discussions from a biblical point of view and we discuss them at home.
As my health had been on such a decline it has forced me to figure out alternatives from the western medicine, and God has been bringing people in my life to help and encourage me through this. He has also rekindle an old passion of mine from my child hood, and that is animal rescue. For me it's dogs, specifically the misunderstood "Pit Bull" he has been teaching me the simplest sweetest lessons from some of the most abused and broken dogs.
Old friends that I haven't seen and talked to in years are now apart of my life again. They make me laugh and support me and we can just laugh together. I've made many new friends, some that have made such a huge impact on my life and some I've only met but feel like I've known them forever.
There are so many things that have come from the difficult times but isn't that the way God works. It's in our weakness and sorrows that we find healing and strength that can only be given by God.
God has moved me to start blogging again. To share with you, my journey to a healthier lifestyle. From the way I eat to working my way back up to being physically fit. The lessons and stories of the dogs and other things that touch my heart. And my journey through Proverbs.
I have given my self a challenge, to really learn to gain my wisdom through God. We started a series at church on Ecclesiastics and also includes the Proverbs. My goal is to read all of the Proverbs 1- 30 each month, and really soak them in. Different versions of text, and study notes, over the next year. I feel like God has somethings he wants to show me, to guide me and help me understand the changes we've been through.
If you want to check in and see what I'm up to please do. I appreciate any positive feed back.
So hope to see you all around here and there.

A Lesson I didn't expect

Then as time passed she began to sit in his lap, or asking him to play with her by wrestling or playing tug a war. Brett always allowing her to ask for the contact never pushing his love on her.
Then came the day when she started to hug him, and asking him to carry her, even to the point of falling asleep while he carried her or as she slept on his lap.
Then the day came, when she started to run to him and hug him, the day she asked him if she told him she just wanted to call him Daddy. Over the years she has grown closer and now knows her earthly father was given to her by God and the he will do whatever he can to protect her and love her. That even though she's not his biologically that she's his daughter not just by adoption but by the love in his heart for her. The Lord is good, a refuge in times of trouble.
He cares for those who trust in him... Nahum 1:7
Be back soon,
Carol

Wow that was a long break.
This is Brinn with her cousin Hugh. There have a special bond they share the same birthday. This was taken at a BBQ that Hugh and Michelle through for Hugh's village on October 18th. That was a group of friends and family that brought meals, and did many other things so that Michelle could concentrate on Hugh and his care.
realizes that includes live bait or not. This next photo is my cousin Deanna, another amazing story, and one of my inspirations. She's Hugh's sister, and then me on the other side. Deanna is a couple months younger than me, and we are 3 of 4 younger set of cousins in my family. Sadly Darcy lives in Florida, so we don't have her in this shot. But she promised on Facebook next summer to come visit.
This is Brinn with the Pastor from Camp first thing she told us was how awesome he was. "Daddy you'd like him he's as good as Dr. McArthur" She told us all about the story of Joseph the subject he taught on through the whole week, was Faith. Brinn's favorite activity was the night games. She loved them.
Well Brett got this done. It's his one and only tattoo, but he'd been wanting one for a long time. I designed it. It's been interesting to see the reactions. Leo the tattoo artist pumped it up from my drawing, he made the cross all rugged. Some people just stare at it, some people just have to ask what is that word. "Tetelestai" John 19:30. Brett loves when people ask. He tells them it's what Jesus cried out on the cross before He gave up His Spirit, it means "It Is Finished". Jesus took on all sin of the world and finished Satan's hold on us, when He gave His life on the cross for you and me. It's very interesting to see peoples reaction to Brett's boldness. He's already thinking about the next one for the other arm. In answer to the next question No, I didn't get one. At least not yet *wink*. The rest of the time we went to dinner, went for a bike ride, took the dog for walks, and watched movies.
She had no clue that our real destination was Disneyland. We drove right past it she was so wrapped up in what she was watching she didn't even see it, and when we got into the hotel lobby (and it was an extremely inexpensive hotel) she was very disappointed in the hotel. Then she was even more disappointed by the room, which I have to agree smelled funny. So we unloaded the car packed our backpacks, and headed to dinner. She saw all the banners celebrating Disneyland's 50th birthday, and as we walked right past Disneyland and the entrance, her mood went from a bit disappointed to bummed out. At that point we thought she'd figure it out, but she'd asked before school got out if we could go to Disneyland and we told her we couldn't afford it. So in her mind there was probably no way that we could go. Wednesday, June 24, 2009
My Little Girl Turned 10 Today / Urgent Prayer for my cousin
So here she is a newborn (sorry about the photo quality the first few pictures are scrapbook pages, and Brinn was born before I had a digital camera) She weighed in at 8lbs even and 21.5 inches long. Eighteen hours of hard labor, and then an emergency C-Section. She was face up and the cord around her neck, but she came out screaming and then peed on the nurse. (One of Brinn's favorite stories.)
She's about 4 months old in the picture above. So just a few blast from the past with Brinn now to todays event. I picked up Brinn from VBS at church at 12. Brinn was super excited, because she new we were going to take her to lunch, and she'd finally get to open her presents. We've been telling her that we hoped she likes the socks and underwear we got her. She kept saying "you did not get me socks and underwear." (hehe)
This is Brett and Brinn and the Peninsula Creamery in Palo Alto. It's been around since 1928, and as a side not it is not a Weight Watcher friendly menu. So much for my extra points this week. Below is the 3 of us. Brinn just started in on her presents.
Brinn's favorite color is green. She loves it and wants everything in Green. She's been asking for a Nintendo DS for about a year, and finally convinced me that she would actually play it. The part she didn't like was that they don't come in green. Silver, black, red, blue, and pink but no green. So around April sometime Brett and I were in Target (love that place), and low and behold Nintendo brought out a limited addition Green (the exact neon green she loves) DS, and it came with a case and a cooking game. So we bought it and shoved it in our secret hiding place, and waited for her birthday. So the first gifts she opened were her DS, and the two other games we got her. She was so excited, and had it out of the box and playing it before the food arrived.

So here is the next part of the story. On Easter break Brinn decided that she wanted to save up money for an ipod nano. So she started working on filing and different things in my office, when she's been at work with me. She'd saved up $60.00, plus had about another $25.00 or so she'd saved up for. Then she started getting birthday money, and she'd figured out pretty quick that she'd save enough for her ipod. So here is the kicker, Brett had a really big side job, and decided that she'd done a good job saving, so we bought her the green (of course and yes she's spoiled) ipod nano. Brett for the last 2 weeks has been sneaking her CD's in the house and uploading them to her ipod, and then adding some digital copies of movies for it.
As Brinn would say "Oh no you didn't" Oh yes I did undies, she was really not happy but, I said look honey they are wedgie proof. .
So the next present was a couple of little cami bras and a tank top. She wasn't quite as upset as she was about the undies. I reminded her that we must be greatful for all things large, small and especially the everyday things we are blessed to have.
So here she is with her new hat, and her iPod, getting ready to watch Phineas and Ferb.
Totaly zoned in walking to the car watching her show.
So what you may ask did she buy with her money. Well she bought a case to protect her iPod and keep it from getting scratched, she bought the new Jonas Brother's CD, and of course what every non girly-girl, buys a second Castle Legos battleship. She still has money left and a couple of gift cards. So we'll see.Friday, June 12, 2009
What's in Your Heart?
Brinn has received different awards for different things most improved in math, most improved in handwriting, Bible Memory verse, but the one that thrills my heart is the fact that she cosistently gets Good Citezenship, in fact she has a stack of them.
That is the award she is holding up from Monday. Brinn however was disapointed because she didn't receive any Academic awards this time.
She said Mom " I always get this, I wanted most improved in social studies." As her mom I can understand and agree she works hard sometimes until 9pm on her homework and studying for tests. She gets A's & B's in most everything with 1 C that pops in just brining her shy of the Honor Roll, this frustrates her to no end. . So what's a mom to do? Every year I watch as Brinn she feels failure not motivation for not getting the academic recgonition she works so hard to get.
This past year Brinn has grown spiritually with the Lord in her understanding of how great God is. So I asked her right before I took this photo, what do you think God looks at? (She was so sad, it broke my heart.) Your knowledge of what year the French & Indian war was or that you respect your teacher, classmates and are known to be a friend to all? Her answer was " how I treat people." So I reminded her that it's not the knowledge we have in our head, but the Love we have in our heart for God and for others. I told her doing well in school is important, but loving others, that Is what is most important to God. Then she smiled and was happy about her award. So far my Brinn's excels in loving others. I'm so proud of her.

So this is what I've been up to lately.

Oh yes to complitcate matters we decided that next day after the reunion, to repaint our living room. That was an all day Saturday event. So here are the before paint pictures, but after the theater was moved into the living room.

Now the after. We now have dark brown ultra suede curtains up over the windows too.
The wall with the screen is a dark choclate brown. We are really happy with the way it turned out. And as an added bonus it matches our dog.
The brown blends well with my purple walls, and I know have green curtains over the windows in my scrapbook room. That match the accent color in my room. It's my favorite color combo.
Then as a side note. The weekend before and the Sunday after we painted my niece Amy came over and we worked on her Senior Year scrapbook. It was the 3rd weekend we dedicated to it, and we still have more to go. It's turning out awesome and I get to live vicarously through her. We seem to get more creative between the hours of midnight at 2 am. We also have great talks. I told her I wouldn't put this picture on Facebook, but I didn't say anything about my blog. hehe.

The next night, Brinn made dinner with Brett's help for me. They bbq'd chicken and made veggies and potatoes. Brinn made the center piece out of her monkey collection. This was a combo mother's day and act of service she was challenged to do by her teacher on Family Nights at church.
Saturday May 16th was mine and Brett's 6 year wedding anniversary. Brinn spent the day and night with our friends and we went t Monteray Bay for the day. Brett saw a guy with a big beast of a camera, and asked him to take a picture of the two of us. The guy gave me a mini lesson on setting my camera for being outside, and took this picture of us. His name was Eddie, such a nice guy.
We also took Nakita to the beach with us. It was her first time at the ocean. She decided that salt water is not very good when you are thirsty.

Nakita has issues when it comes to other dogs, so Brett just picks her up when she gets crazy, and she mellows out. She really is such an odd dog.
Oh yes and my new haircut. The other celebration for me that weekend was it was my 10 year rebirthday. On May 17th, 1999 I surrendered my all to God and have been completely in love with Jesus ever since. It was a special day. We actually celebrated communion at church that day (which is usually the first of Sunday of the month) because we are going through the book of Mark, and had come upon the section of the last supper. We had extra worship time, and it was like God planned it as a reminder for all He's brought me through, and all He rescued me from. It was an awesome time.
Now this lovely couple is my cousin Hugh and his wife Michelle. They were in the earlier reunion pictures. They had their wedding on May 23rd. So much fun and so beautiful. I sadly don't have the picture of them ridding off on his Harley together, but there is one of Brinn standing by it at the end. Hugh and Michelle actually got married in December when we found out that his mom, my Aunt Sylvia only had a couple of weeks to live. They had a private ceremony (which I was blessed to be apart of) so my Aunt could see her baby boy get married. Michelle is the proud wearer now of my Grandmother's wedding ring. We are so happy to have her as part of our family.

This is my immediate family. Starting in the front my sister in law Jill who's married to my brother Gary, then you have my sister Phyllis across from her is my sister in law Janice, and then next is my brother in law Don and across from him my brother Paul.
And last but not least is Brinn standing in front of my cousins Harley, yes she rode it with her wedding dress on. I have to get a picture from them on this. Don't you love the helmet with the vail. So much fun.
So these are the highlights of the last couple months. We also had other things going on as well. Brett and I started taking a class at church called the "The Call" it's to help you find how God wants to use you and the things in your life to reach people and build the kingdom. It's been interesting, and time consuming.
We are also gearing up for summer, June comes with end of school, Brinn's birthday, this year my niece's HS Graduation, VBS, and Brinn getting ready to go off to summer camp for a week for the first time. (please keep her in your prayers as she knows no one who's going). This weekend it's off to San Ramon to watch my niece's senior class take over the church service at their church, and then lunch with my mom.
So I'll say good night for now, I'm off to a Women's Dessert for church. Been saving all my weight watchers points for tonight. YUMMY.
Be blessed my friends. I'm going to try and make the rounds to read and catch up with you all.
Love,
Carol
